Now for something completely different. During the early days of the pandemic, shelter-in-place orders meant many charitable efforts dedicated to serving people who are food-insecure, lost access to volunteers. Meanwhile, the homeless and the hungry still needed to be served. So during that period, I cofounded a nonprofit called Project22Nine. Since May of 2020, we have been rescuing the overproduction of fully-cooked meals chef-prepared for dinner subscription programs — the very same premium gluten-free keto-friendly meals that are shipping out to paying subscribers — and diverting them safely and efficiently to the kitchens and pantries that need them most. In the last year, we have diverted nearly 1 million meals to hungry Chicagoans. That number grows by 20,000-30,000 every single week.
